Chaps, tonight I shall be cooking up sheeps liver, heart and lungs in a spicy curry for the brother.
 
Smoked chicken wings.

Apply rub

Yup. 12 at night, most times... This stuff really doesn't take a ton of time if you prep properly. Stuff that cooks for hours just need to be kept steady, which happens when you don't mess with it too often. The Maveric Digital Wireless thermometer has been a huge help with this though. Just leave it on my desk, and I know when/if I need to make adjustments.
