As far as I'm aware, of the major messaging apps, iMessage is the only one that can't be decrypted

I just checked with an experienced Apple user. He confirmed to me, as I was expecting, that if you reset your device and then re-add it to iCloud your messages will be available to you. That means that what you describe doesn't match the reality. If messages are independently encrypted with device specific key-pair, you will lose access to the old messages as soon as you reset your device. Unless Apple has a copy of your device private key that is restored when you re-add your device to iCloud. But if Apple has your private key the whole narrative that iMessage is 'end-to-end encrypted' and better then Google Hangout becomes ridiculous.
Also I seriously doubt that Apple will store multiple encrypted copies of each message. You can send pictures and videos using iMessage. Storage cost will be way too high, even for Apple.
