Which 9mm ammo do you recommend for EDC?

Yes obviously, these are all fringe cases. Which do happen at scale. Just like are you ever going to need Duty rounds’ extra penetration, or are you just going to mag dump at close range into a hijacker’s face and chest? You pick your poison and take your chances. For the same reason that hollow jackets are preferred in an urban environment at all, the concept of hollow jackets with extra penetration seems riskier for everyday users (which is why the round isn’t targeted at them).

Two rounds into the ground will have the same effect if you are trying to warn/scare.

If you are being shot at the last thing you want are some blanks in the way.

I think the theory is that if someone takes your gun, they won’t be able to shoot you … point, click, rack slide, click … run away.

This is bad advice. The time between being shot yourself and being able to use the gun is milliseconds. With sufficient training one should be carrying with a chambered round, ready. No warning shots, when it's time it's time.
