Single malt distillate, double distilled. Watered down to 60% ABV and stuck on medium toast American Oak and medium/dark toast French Oak (a mix of the two). American for that amazing flavour, and French for that amazing sweetness you get from the oak, as well as a darker toast to impart some more colour (the colour in the pic is WAY too light). After even only 24 hours the flavour/smell is getting REALLY great, and I can't wait to see how this turns out.

It's VERY young, obviously, so the nose is quite sharp, as is the taste. However, there's a floral aspect to it that really impresses me this early on. I'll see how it is after 2 weeks like this, and if there's no real improvement I'll add a finger or two of heavily charred french oak as well, just to help it along a bit. I'm planning on leaving it on the oak for at LEAST A month, but I'd prefer to have it on there for 3 to 6.
 
Just a friendly question: Why do you buy 3 bottles of a Whisky ...that you've never tasted before? Isn't that a bit "alll eggs in one basket"....pun intended.

I love the distillery and i needed three to get free delivery :)

If for some reason I hate them I can resell

Bottega, Whiskybrother had one as well. Both advertised the 62.1% B517 batch so this was a surprise. A rather pricey foray into Bourbon but I've liked every barrel proof I've tried so far :p! This is no exception but still early days.

Quite impressed by this sounds very interesting :).

So now for something completely different.

During the Ardbeg day tasting of Ardbeg Blaaack I wasn't all that impressed by the wine cask influence on the Blaaack. Of course I know those with a bottle will find it opens up nicely but I opted to not try to get a bottle in the rush. During the tasting I thought adding Ardbeg 10 and Arran Amarone Cask would be an interesting combo, I tried it a little and it was. Also during that tasting we didn't have the An Oa which had been my favourite last year. So I went and bought a bottle of An Oa. I have since tried a number of small experiments such as 60% An Oa and 30% Amarone and bits and bobs of An Oa + Inchmurrin Madeira cask, + Bains 15 and these really didn't work as well as the Amarone Cask. I found the Amarone at 30% to be too much of an influence, it's funny how it does hold up well to the peat. The first 100ml experiment I did worked out well enough that I was willing to dump this liquid together so...

Today I went all in making a mix of about 400ml Ardbeg An Oa, 75ml Arran Amarone Cask and I had a small amount (maybe 30ml) of Arran Cote Rotie Cask so I added that too. Will leave this for a while to 'marry' as I've found with infinity casks it really does make a difference for some reason but looking forward to it. So that's a bit of whisky frankenstein! :D

I want to do a food and Ardbeg pairing. Any suggestions?.
I recon smoked pork (possibly ribs) would be a good combo. Also dark chocolate for sure.
 
Which local online shops do you guys that live in the Cape use? I'm looking at getting a few bottles and some glasses, but...

Bottega : Have the whisky I want in stock, and the crystal glasses, but shipping is R420 - R520 !
Whisky Brother : Whiskies 10% more expensive, non-crystal (?) glasses. R120 or Free shipping
Wild About Whisky : Prices similar to Bottega, but don't sell glasses. Shipping R190?

Bottega shipping is a bit sucky pricewise and I don't really understand why they can't get a better deal going on. I think the problem you're having is that you're in the winelands so you're not a main centre. One of the guys up here did an order and I think the total shipping came to 330 for about 6-8 bottles or so.
