For general use I'd say WiFi. Latency doesn't see much of an increase over WiFi.

Easy - if the device moves around then wifi. If its a desktop PC/server then ethernet.
Where possible I'd always choose ethernet though. Too many wifi devices and your network runs like a dogs bollocks.

Wireless wins for easy setup and convenience.

Really depends what you need. Combination of both is ultimately best.
