I'm planning to replace my Huawei AX3 with a wired-only router (no WiFi) and use the AX3 as a WiFi extender connected via Ethernet. I also need to reserve more than 32 IP addresses via DHCP.

Would something like the TP-Link ER605 work if I connect it directly to my ONT? And will I still be able to log in and authenticate with my Afrihost (Octotel) fibre account?

Sorry for the late reply, but "TP-Link ER605" should work for this. Does Octotel use PPPoE? If so then you can connect it to the ONT and setup the PPPoE on the WAN interface.
The AX3 would also work, you can simply disable the WIFI on it? Maybe it has other limitation that bothers you.

I think you can turn off Wi-Fi on any router. My tp-link has a button and a timer to turn it on and off at specific times. Handy to cut kids off for homework or bed time.

All routers have the option to disable WiFi. I have installed routers at a school where the requirement was no wi-fi at all

Not so much as disable wi-fi but not enable it and create a strong access password for setting it up
