The attachments are pretty much what sold me and of course the brand being tried and true for decades.

There’s also just something about not minding this standing on display in the kitchen where the others need to be packed away.

Only a pleasure! For your first loaf thats a great one. Now the journey continues for the perfect loaf!

Always make sure to allow atleast 20 odd minutes for it to cool properly. Do not be tempted to cut a hot loaf to early.
 
I bought a bread machine last week and I’ve been experimenting with basic loaves but struggling as the top would sink a bit. Finally I got my ratios right - turns out I was using way too much yeast. This morning it produced what I’d call a perfect loaf. It’s basic but the kids love it.

I've been raising a spelt sourdough starter for a couple of weeks now, so this morning I baked my second loaf - the first one didn't have much rise at all. Really happy with how it came out.

My technique needs a lot of refinement, and you can't see the splitting at the base here, and I think it should still be rising more than this. But overall I'm thrilled to have made this much progress already.

I use the bread machine dough setting to mix and rise it after the autolyse. Then I shape it and rest it in the fridge overnight before baking in the Dutch oven.

Sourdough is a never ending journey for that perfect loaf. Been making them for 5 years and there are 2 loaves that I cant fault till we meet again its a delicious journey along the way :)

Going to kick up the backing again this holiday! Likely bake some english muffins or bagels in the next week. Havent made sourdough in what feels like forever.
 
Day 2, a sourdough sandwich loaf made and baked in the bread machine. It's extremely simple and the kids love it. It's all very well to make these incredible looking banneton no-knead high hydration loaves but it's also pretty time consuming.

Apart from the autolyze this was a hands-off experience. After the rest I set it to the dough function and let it off for another 3-4 hours to continue proofing. Then I just put it to the bake function for 1 hr, after slashing and sprinkling with flour. Came out beautifully, not as much character as the dutch oven overnight method of course, but it's for the kids.

I also use my bread machine for no knead sourdough on occasion. They come out pretty good.

Other times I will preferment sourdough and then add it plus instant yeast, some flour and sugar to the bread machine and run a normal cycle.

Sourdough is great but its difficult to work into a busy schedule and cheating still gets a nice mostly sourdough bread.

Recipe?

I’m yet to manage a sourdough sandwich (pain de mie) bread that isn’t too sour for kids to enjoy.

I would imagine KitchenAid would amount to very similar result as bread machine.
