I’m yet to manage a sourdough sandwich (pain de mie) bread that isn’t too sour for kids to enjoy.

I would imagine KitchenAid would amount to very similar result as bread machine.
Mmm.... I can only think that you need to "freshen" your starter the longer you leave it between feedings the "sourer" it gets.

BUT if you wanna try some next level sandwich bread go with this, really beautiful and yummy! almost minimal if not zero sour

Tangzong breads are amazing!

This is basically the bun version


I made tangzong buns for Thanksgiving. They didn't rise properly though. Needs practice

Thing is there’s no problem with the starter for normal artisan style sourdough bread.

At most there’s a week between starter feeds.

I want to say I’ve tried that exact recipe, but maybe I just had it on my wish list, don’t remember exactly but will inevitably get round to it.

Probably going to try the last one again but with less starter just for some proper testing.

Tomorrow I’m trying two different recipes side by side first. One with the KitchenAid and one by hand.

Ah ok, let us know how it goes. I honestly HATE working with sticky dough I have done loads of batches with hand and now almost exclusively use my bosch kitchen machine but find the consistency better overall, this is just me though :)

Have fun alwasys a treat watching everything transform from raw ingredients into beautiful bread!

Yeah I’m very much over doing it by hand.

This is just for festive shenanigans.
 
Time for bagels again.

Dough proofing as we speak.
And done - ill crank out some english muffins for the freshly harvested honey later this week.

That looks delicious! Had that for brekkies sans onion and lettuce. You must try the everything bagel "spice" its worth the effort making it

I made cardamom buns about a year ago. The twisting of the knot is the tricky part. There were quite a few really skewed ones. The taste is incredibly fragrant though. Hopefully you’ll do better than me.

Yeah it does look like the most tricky part of the bake. Watched a few videos on it. Think I'll give it a shot tomorrow!

Oh it’s everything spice except I didn’t have garlic or onion flakes so it’s just powder.
