I've had a few near misses as well, it's been a while since my knives have been this sharp, I have to wake up a bit. There is no trifling with razor sharp knives, even washing the dishes becomes an exercise in mindfulness.
I'm looking at these sharpeners, I see they now sell one that does a 15 degree angle, which is great. My only issue is that a couple knives need to be reprofiled, and I wonder if it can handle taking them from 20 to 15 degrees for example, or taking of enough to get out chips.Has anyone bought the finer Diamond hones for their Warthog sharpener?
The stock hones are 325 Grit which is great for mild repair of the edge profile but way too coarse for sharpening an edge that has no issues.
Between 600 or 1000 grit which would be the answer?
And would either be able to quickly flatten the honing marks from the 325grit, ie jump straight from 325 to say 1000?

270 Grit – Xtra Coarse
325 Grit – Coarse
600 Grit – Medium
1000 Grit – Fine
Ceramic - can also be used on serrated knives

No, the Warthog sharpener won't work for that. You need something like a Lansky for that.
