As the heading states, what do you guys do after you finished braaing how do you put off the flaming charcoal (water it down or just leave it to cool down over night) what's the right way to put out charcoal out without damaging your braai stand?

I just close the vents and put the lid on. (Weber)

Firstly I don't use charcoal, I'm a real man so I only use dry wood (Rooikrans or Black Wattle) to braai

I just let the wood burn out, and spread any remaining ash, or charcoal'ed wood remnants, into the flower beds. That then gets dug-in next time the gardener is here.

I usually just leave them to cool overnight. My freestanding braai stand is 4mm mild steel.

I let it burn out and clean the braai stand the next time I feel like braaiing.

Never thought about it...leave it to cool I guess. Def don't chuck water on it.

no wonder i've been buying braai stands now and again i've been putting the charcoal off by pouring water on it.

Unless you have some very decent steel in the braai, that will very quickly screw it up... you are contracting the metal too quickly, too often.

why not water ?

i have always thrown water on it and emptied the braai

Edit: just read now about the stainless steel part

i live in a flat and have a small braai ..so have to put it out quick

so now i will use a spade to remove put the charcoal on and then add water

Things generally don't do well with being heated or cooled very fast - since it comes with very fast contraction / expansion which causes stresses.

e.g. Take a rock, heat it and then cold water over it...rock explodes or cracks at the least.

Pour in Hot water, puts out the fire and doesn't damage the braai stand ;)

In the north we use Black Wattle for "atmosfeer" and Kameeldoring or Hardekool to braai the meat.
