Cheese

All of the Welsh Rarebit recipes I know of have beaten egg yolk in them. Beer, egg yolk, red leicester, flour, butter, mustard, milk, salt and pepper...
 
My recipe isn't quite the Welsh Rarebit ... but it's equally delicious.

Scrambled eggs in the microwave with some fullcream milk to keep it sloppy.
White sauce with lots of cheese in it. (you can of course flavour the sauce with whatever you want: mustard, pepper, etc.)
On toast my broe.

i get nice matured dairybelle cheddar at my butcher.. much better and cheaper than the crap they sell at pnp or spar (in my area)

Hard Matured Cheddar Hmmmmm
 
Well on the weekend we were at a wine farm where they had some cheeses on sample and I was impressed by a particular local camembert. So partial retraction of above statement :)
