On a recent episode of 90 Day Fiance, Natalie (from the Ukraine) was washing eggs before use which Mike (American) found perplexing.

Natalie : In my country we wash eggs.
Mike : Over here we don’t.

I’ve always washed eggs before use but this got me searching for more info. Apparently eggs have a protective membrane (cuticle) over the shell which is why they can be kept unrefrigerated. In countries like the US, eggs are pre-washed, which removes this membrane and thus need to be kept refrigerated to prevent contamination.

Some sources do not recommend washing eggs before use since eggs are porous and washing them can end up pushing bacteria into the eggs.

The same reason you’d generally wash fruit or veg before eating, I guess. To prevent any possible contaminants on the shell from falling into the cracked egg, or something.

Yeah...getting cooked anyway so not a big worry and there's so little contact with the outside of the shell. Rare occasion I eat them raw I wash away the white under a tap anyway.

Don't consume raw egg white. Egg white is comparable to the womb, ovaries and oviduct, containing the same substances as are produced in the human oviduct (which is enhanced by progesterone (avidine), respectively estrogen (ovomucoid));

- Avidine in raw egg-white de-activates vitamin B8 (biotine).

- Ovomucoid in raw egg-white inhibits trypsin, an enzyme that decomposes absorbed nutrients.
Might just be nonsense. Either way, don't really like the egg-white texture and taste raw anyway.
