After some R&D I went with the ASUS RT-AC66U B1 AC 1750 - Great router, don't think I can go wrong with it! These dual band routers have me a little confused, are you supposed to have a different SSID for each frequency or is it best to keep it different? I was under the assumption 1 SSID and the frequency would be chosen automatically depending on what is best for where you are in the house?

Depends, some you can set 1 SSID and it will apply for both bands, others you can create a SSID for each band.
If you want some equipment only to connect to one band then setup two SSID's, if you don't worry about that setup 1 SSID only
And yes, with one SSID the device should connect to the band with the strongest signal
