After the Afrihost problems with servers being down we started wondering how we can eliminate our loss of business. We weren't able to respond to client queries, submit emails or receive urgent orders. Is it possible to send up a dual server from the same domain? In other words is it possible for the same email address to use two servers where it is received and can be sent from. This redundancy is important should other similar outages occur. Any comments or recommendations on how to reduce or eliminate this risk?

You can have a separate server handle your email but you can't have two servers handling mail of the same account at the same time. You could potentially use cloudflare dns to setup a second mail server for when one server is down.
I don't think you really need to worry about this. It's not often data centres experience outages like this.

What you want to do is move your email to office365 or Gsuite/Google workspaces or whatever they call themselves these days..
The big guys have the required redundancy in place where you would not lose emails etc..
