Why do you use "Remote Desktop Sessions for all users"? Is it not possible to share the workbook on the server?

Each user has his/her own profile on the terminal server, That's how the client wanted it....for the life of me i never did like this whole terminal server thing, but hey the customer gets what he wants.

I assume Desktop User Experience is enabled?

But want to check what you mean Microsoft help is beyond useless?
Do you actually open a support call?
What severity is the fault?
Is this under premium or partner support?
Are you a certified Microsoft Partner? Did you try with your Microsoft advisory service?

Got the issue sorted eventually,

A program called Split View was installed on the server (people are too lazy to drag and drop a program to the second screen) and while this program was running it was causing office programs to crash.
Uninstalled it and whoala, all back to normal (except for some old ladies bitching and moaning that instead of clicking a window to the second screen they now have to drag and drop)
