Have two non stick pans. One has a lot of the non stick gone (probably in my system as we speak) and the small pan now has a couple scratches. I'm utterly clueless about kitchen stuff. Just want a decent versatile pan that will last awhile and won't cost an arm and a leg.

Considering stainless steel (is Legend okay?) but worried about sticking. A teflon job is easy to use but clearly going to be scratched by me at some point (although maybe my lesson has been learned). There's neoflam pans which sound pretty good but in doing some research it seems there's some question over their safety as well?

Any suggestions?

Steel pan is okay. Make sure your oil is hot before frying things.

Here are some tips when buying non-stick pans:

1. Don't be cheap (a R100 pan is not going to last).
2. Don't buy teflon coated pans.
3. Make sure the base is sturdy and thick.
4. Take good care of your pans. Don't use metal utensils with it, don't heat it excessively, clean it with a non abrasive cloth or sponge and you can keep it lightly oiled when not in use.

This should be enough to keep you happy and your eggs gliding freely.

5. Don't use cooking spray with non-stick cookware. Give the pot or pan a rub with a little olive oil before use instead.

+1, but mainly due to the fact that I breath olive oil. Is there a specific reason not to use these sprays, chemical additives?

I'm not sure what reacts with what else, but it forms a horrible, sticky, mucky layer in the pan. It's... gross. Only after I stuffed up our first ever non-stick pan did I take note that just about any non-stick cookware carries explicit instructions not to use cooking spray.

I prefer decent stainless steel cookware to non stick, if whatever you're making is sticking you're doing something wrong

Scanpan, swiss diamond are both fantastic but expensive. Rather pay the high price and look after the pan so it'll last for years. Don't waste your money on non-stick, teflon, neoflam etc.

I saw Scanpan for good prices but when doing some google searches there seemed to be a lot of complaints about warping and the like.

Just buy a cast iron pan. Even if you buy an old rusted one you can bring it back to life and season it.

i find the tfal pans are awesome, my parents have one thats almost 5 years old (warped too) and the non-stick coating has yet to fail

If your budget will stretch try getting a German brand called Woll that is available here. I've been using the same frying pan, gridle and baking pot nearly every day for the last five years and the inner surface looks exactly the same as when I bought them, they're that good.

Unfortunately it won't.
