Why not just do the admin yourself if you can’t afford help without feeling pain?Somebody just to the admin and other stuff I procrastinate on, mostly remote because I work from home and am anti-social, maybe get a student give them a cheap smartphone, a old laptop and a data sim.

Not really. Your legal status in the country and being defined as an employee in terms of the LRA are two separate issues. The CCMA can still rule on matters where the employee is undocumented.You can avoid all of this by hiring a Zimabawean.

who works for like R5,000pm these days??? I was earning that when I left school in the 90's ffs!

You will also have to register for Compensation fund on top of the UIF.
Speaking of Zimbabweans, not all of them are as competent as people think. I know it is a universal concept to think your own citizens are lazy and incompetent, South Africans in America or Britain will always work twice as hard compared to Americans or the British in almost all the cases. That is because they are in a foreign country and the job is all they have for survival in that country. It is human nature. If you do thorough search, you will find a competent South African. No, I am not saying hire a South African, it is your choice.
Like someone pointed out, an undocumented person has exactly the same rights as any citizen when it comes to employment law. You cannot do as you please.
