For me, the longer cold proof adds better flavour to the bases, so I prefer that when I have the inclination to plan ahead.

I'm mixing a batch of dough now using vital wheat gluten for the first time. I've increased the overall gluten by 1% to see what the overall effect will be.

Or better yet, it would have been nice gesture for you to order it for her.Had pizza last night - because Thursday is pizza night, and while I was baking my wife's pizza a playing card sized piece of soot detached itself from the dome and landed on hers.
Fortunately, mine came out ok.

Found mine in-store (PnP) but not online.Oddly want to try this but don’t find it in any shop in Cape Town.
And they have a weird limit of only shipping 10kg or some such when going direct.
Usually I just buy the Italian stuff from Rialto along with the bulk pizza sauce.
