Sure - why not. It will be different than your usual crust but that's not so bad.

In the US we get balls of pizza dough in the supermarket - turns out it's better than I thought.

For me, the longer cold proof adds better flavour to the bases, so I prefer that when I have the inclination to plan ahead.

There are other methods to speed things along. A poolish or biga for next day dough or even beer instead of water.

I'm mixing a batch of dough now using vital wheat gluten for the first time. I've increased the overall gluten by 1% to see what the overall effect will be.

Sure, I've tried it all. Keen to hear how the added wheat gluten work out.
 
No issue with Eureka, although their 00 does have a lower protein content than Caputo afaik.
I buy vital wheat gluten and add it to my flours for higher protein :)

0.6% I don’t use enough of it in my recipe for it to make much of a difference.

And there’s the vital wheat gluten…
 
Had pizza last night - because Thursday is pizza night, and while I was baking my wife's pizza a playing card sized piece of soot detached itself from the dome and landed on hers.

Fortunately, mine came out ok.

Quite a tragedy but life happens and hopefully she was wise enough to order one for her from Mr D. Or better yet, it would have been nice gesture for you to order it for her.

Mr D? That would be nice but they don't deliver to my area and this is the Homemade Pizza thread.

Anyway, she only lost a slice. I did offer to make her another one but she declined.
 
I don’t know what the hell but so far every sourdough based pizza dough has been a complete disaster.

And I would like to think I’ve mastered sourdough bread baking in all its various forms so this isn’t like I’m new to the game.

It just doesn’t have any gluten structure and elasticity and completely pulls apart, which wasn’t so bad with a tray and a home oven but now that I need to launch it into a pizza oven it’s impossible to use.

And they have a weird limit of only shipping 10kg or some such when going direct.

Usually I just buy the Italian stuff from Rialto along with the bulk pizza sauce.

Found mine in-store (PnP) but not online.

Aaah maybe it’s something to finally pump up those eBucks.

CAB foods apparently carries it but it’s a mission and they have zero online presence.

Ironically I went past the mill last week but had no space to bring any back home.
