Using gas isn't braai, prefer wood but briquettes will do too.

Depends on when I'm going to eat. Briquettes burn longer, charcoal burns hotter but shorter.

Briquettes if I'm going to be making a lot of stuff to last the day.

Charcoal if I'm just going to just chuck a few chops and wors to eat in the next 30 minutes.

Gas isn't braai so that's never an option...

I don't braai. But if the SO is braaing there better be some sort of fire/coals for me to huddle over!

Otherwise he may as well shove it on the stove

Slow cooked brisket is awesome when you get it right. Also you just leave it to cook while you’re watching cricket/football. Check on it every 30min or if you confident enough every hour.

Gas for quick easy convenience (these things called kids apparently need to be fed before midnight), wood when the minion isn't around.

Wood in Weber, some oak shavings if I can get hold of them.

Now the more important questions, what order do you braai the various types of meat.

Chops (with fat) + Boerewors
Steaks + Thin chops
Yard alarms (Chicken)
Thin Boerewors
Braai Brootjies

For my standard Weber I use a charcoal chimney. A very good Weber tool to have. You get inexpensive ones, but they don't particularly last long, neither are some practical.
5L beer keg with extra holes, plastic parts removed. Handle with tongs when hot. Paulaner works particularly well.
