Slow cooked brisket is awesome when you get it right. Also you just leave it to cook while you’re watching cricket/football. Check on it every 30min or if you confident enough every hour.
5L beer keg with extra holes, plastic parts removed. Handle with tongs when hot. Paulaner works particularly well.For my standard Weber I use a charcoal chimney. A very good Weber tool to have. You get inexpensive ones, but they don't particularly last long, neither are some practical.
