Joking aside, it is not to tell the sender that if they send to green they will be paying for an sms, whereas to a blue for an iPhone it's free?
I've got the full Adobe package through my work and use Adobe Scan on my phone quite often. This actually looks much quicker, easier and generally better.

That's why apple implemented the colour bubble system initially so users could differentiate a free text from a premium text(SMS=green bubble)
"Free text" and "premium text confuses the issue. In the US, and many other countries, users get so many free sms/text messages there is no premium on them. The bubble colours simply differentiate iMessage from sms/text.
