Microsoft Open License (CAL) setup

Im pretty nub when it comes to Microsoft Windows Servers(especially the new flavors) and I have to go install a CAL on a SMB 2008 server.

Where abouts in the admin menu would you I go to enter the information? Just want to know before I walk onto that network.
