apart from dumbing the main site down, anybody got any helpful links or tips around mobile theming?

Theming? Usually the less pictures in a mobile theme the better. I haven't had much experience with mobile-specific themes, but just 2 things I would point out:
1. Good Contrast (Some phones have bad/limit viewing angles, some show much darker when some light is reflecting on the screen etc. )
2. Right size text: play around, but keep text small and easily readable, consider that most phones do support zooming incase the text is too small too.

There's much to say, but also consider how layout works (keep most relevant content at top - it's irritating to scroll for 5 seconds because the logo/top menu etc. is always in the way for content pages, rather use a hyperlink so they can 'jump' to the menu if need be).
