I have always been on MTN prepaid and I know roaming was on by default but now I am on contract and need to activate roaming. How does it work on contract?

There is apparently some SMS number you can send a message to activate, but if you do that wrong you could not have any roaming....
Depending on many variables they might ask for a depodit.

Make it clear you want sms roaming only NOT data or calls

But that is the thing, I want full roaming (business trip) so can I still call that number?

Yes you can, then go pay the deposit and don't scream when you see your data bill on getting back
