Pan-fried Steak

no wonder you don't like meat if you're eating minute steaks :)

minute steaks are a rip off.

Get an inch thick piece of steak, no smaller than 300g, preferably aged. A bit of salt and pepper and fry away. You can brush it lightly with olive oil. Dont overdue it. Keep turning often, like every 3 or 5 minutes or so. Fry until its the way you like it. You can see on the sides when its cooked through to your liking. Dont spoil it with gravy and sauces.

Some veggies on the side and a glass of red wine, and you are set.

Pretty easy and quick.

Coming back to the pork chops. What do you do with the fat? Sometimes I find it ends up a bit chewy where I would prefer crackling. I have scored it in the horizontal & vertical before rubbing salt in but don't always get the desired result. I've never actually tried cutting off the 'rind' part before though.

I cheat. I use a couple of sosatie sticks to skewer all the chops together and then I braai the skin and fat for a few minuets before I lay the chops down.

That never crossed my mind in all honesty, good idea ;)
 
Had an awesome rump steak on Monday night, used some peanut oil, salt, pepper and a little paprika, let the steak air a bit, rubbed the spices in, let it sit a little bit more then put them on the grill at medium heat, just enough so there was no steam but it made that satisfying sssshing sound :-). Cooked for about 3 minutes a side and served hmmm so soft and delicious.
