Pizza! Pizza! Pizza!

00 in this recipe is not as easy to work with as AP flour. (If recipe calls for AP, I usually just use decent bread flour).

FWIW, I used 00 for today's pizzas using the recipe posted and was really happy with the results.
 
All hope is not lost.

After making it yesterday and managing to funnel it all into my usual containers I left it in the fridge a few hours and then took it out just after midnight to leave on the counter.

This morning after a bit of bench flour as the outsides were quite sticky I managed to shape them into balls properly.

Put them back in the fridge now and will take them out at 12:00 with the intention to bake at 17:00.

Will sommer make Serious Eats sauce as well while I’m at it later.
 
Also I just happened to receive this today and it seems appropriate.

Going by the crusts all being eaten the sweet less chewy base seems to be a lot more kid friendly.

First one was in for 12min but upped it to 14min for the second as the middle was a bit too floppy for my liking, as much as I know that’s how NY is supposed to be.

Yeah piece of **** Defy with a Cadac pizza stone and a Le Creuset pizza tray, because I don’t want to struggle with launching pizzas onto a tiny stone and failing hard.

Cranked to full blast and preheated for 30min.

My usual go to for quick/easy dough is this one below when I’m not using sourdough.


It makes about 6 250g balls.

I may very well try to blend the two next time and add the sugar and olive oil to the Gozney one and see how we go.

btw - has anyone here tried baking pizzas in a patio gas braai? I recently bought a second hand one, and the thermometer on it goes up to 400 degrees celsius. Seems like a good option to bake the pizzas? I'm going to try it with pizza stones pre-baked.

My car's speedometer goes up to 280...

I've cooked pizzas in my weber q and it's ok. The trick is to further insulate the stone, I use two, and then get it really hot. Don't open the lid any longer than you have to.

Doing this also ruined up my grid so use an old one if you have one.
 

Not sure if Vades did or not but I add 10g of milk powder.

I've done some research and the milk powder is only really useful if you're cooking the pizza in a home oven so you can probably leave it out if you're using a dedicated pizza oven. Other than that there's nothing to change.

However... if you're looking to do a long bulk ferment then you can probably also reduce the amount of yeast by half.

Thanks for this. Yes it will be home oven so will add the milk powder. I'll make it tomorrow morning for a Saturday late afternoon/evening meal
 
Col Cacchio Pepperoni and Portuguese sausage home oven Pizza.

Super deal at R81. Great quality and much better than any other pizza in a box.
