The US is littered with mediocre pizza, IDK what that weird **** is places like Chicago and Cali produce, but NY pizza is the best in the world.I still want to go to New York and experience authentic New York Pizza. I will mount a thermometer on the top. What should the ideal temp be?
And lastly, any dough recipe ideas for let's say 4 pizzas? I have a Kenwood dough mixer if that helps. What flour should I get?
This is a last-minute thing as I have to do this experiment this weekend.
