I thought the empire was defeated in the 3rd movie, considering the time between Episode 6 and 7 I would of expected what would of remained of the empire to be dealt with

Could be like a Byzantine Empire situation. The ''Empire'' still exists, but is a fraction of its size. Maybe dispersed throughout the galaxy with batches of systems and planets still loyal to what is left of its leadership.

Darth Maul was episode 1 - the earliest of all the Star Wars movies. The Force Awakens is set 30 years after Return of the Jedi. I don't see why the technology in episode 7 would predate anything we've seen thus far.

While any film could contain flashbacks, I don't see any reason to assume that one will without any evidence. Previous Star Wars films have not had flashbacks.

He is correct though, anyone who know how lightsabers work will know how the crystals work. Up to three crystals can be used to boost the power, but only one is required. The video I posted where Angry Joe gave his impressions may actually be spot on, perhaps to limit the length due to the power output, the lightsaber thus exhausts (through additional emitters) its additional energy into hilts. Meaning that this is an extremely lethal lightsaber, power wise.
