Don't think there is anything you can do. You fscked up and crossed a line - even if you ignore the yelling and screaming, how can she trust you again after you've been snooping through her stuff? Consider it a life lesson and don't let it happen again...

1 Stop drinking. You run the risk of ruining other relationships if this is how you can react when drunk.
2 Realise that this girl is completely out of bounds. For pride and right-ness sake, you need to make the biggest apology possible to her. A low key one of course, as she is trying to be very civil about this and keep it out of the workplace. A heartfelt letter if she wont have a private conversation with you.
Points to cover in the letter:
how sorry you are.
The fact that you realise that the apology will not salvage any kind of friendly relations with her but you want her to know how sorry you are, and as a character building exercise for yourself.
