Did not know Rebel Farmers sells meat? is that the Rebel Farmers on Hendrik Potgieter?

I have always wondered if it is not better to blend my own spices as opposed to using the ready to go Freddy Hirsch or Crown National option.

Guess I will have to try it out.

Sorry I'm confusing myself. It's the one you recommended earlier in this thread. The proper name is escaping me atm. I bought some safari Crown spice and Worcester spice instead of my own normal blend and so far it's working out really nice. Liking the taste profile.
 
Next time I'll try the Springbok butchery in discovery I think. Always good to shop around. :)

Thanks I'll definitely give him a go. Always good to build a relationship with a good butcher. What do you roughly pay for your silverside?
 
Yep so do I, I am very fussy these days, their biltong just does not cut it anymore, that's why I make my own, still experimenting, don't think I will stop experimenting, but I still prefer the taste of my biltong.

I find that when MW has a special the biltong is always vey wet and it needs more time in the dryer, so one cannot satisfy their biltong craving immediately.

They sell their biltong "wet" when on special so that they make more money. They market it as R120pk but actually you are effectively paying R160pk in comparison to their normal dryer biltong.

To be honest. I don't.

I go hunting 2-3 times a year and make game biltong. In general I don't make my own beef biltong. But I do often buy biltong from Johan.

That Worcester spice - is it also a Crown product?

Yes, I realise the profit factor! they used to sell it much dryer at their Comaro Crossing for R109 per kg some years back.
Butchers buy their meat by the carcass, and pay per kg.

I think I need to call on Johan, I bought one of those R500 sausage fillers, and 18mm sheep casings, I struggled to yet the mince into the casing, also struggled to get the casing onto the spout. In a youtube video it looked so easy.

Can you post a picture of the sausage filler? Maybe I can offer some advice?

Is your casings in water when you try and pull it over the spout?

Will give it another shot, I soak the casings in water about 1 hour beforehand. I think my mince mixture needs more water to give it a softer consistency.

Add a little bit of water to your mince mixture. It will dry up and won't do anyhing else much more than assist with the mix going through the spout easier.
