I also nommed store bought this morning, but it was not too bad.

I hung a batch on Saturday evening but I've been battling against humidity so it's going to be a long road before this batch finishes.![]()
Our humidity is between 50 - 60%. I left the light on 24/7.
The average humidity, since I hung it, has been 81% here... I'm going to have to get a bigger bulb.![]()
Would I need to switch on the light while drying? This is for Cape Town area. I prefer wet biltong
I would if I were you. The light does not dry out the biltong (that's what the fan is for). The light dries out the air to pull moisture to the surface of the meat so that the fan can blow it dry.
