The Official Biltong Enthusiasts Thread

Some of my family don't like the fat on biltong, Some pieces i pull fat off cover fat in biltong spices and also hang it .
Normally leave it till extra dry to crispy .
Tast great :)

First batch went in Saturday evening.

Used C-Grade Rump @ R70/kg. (Nice yellow fat)

I hung a batch on Saturday evening but I've been battling against humidity so it's going to be a long road before this batch finishes. :o

Our humidity is between 50 - 60%. I left the light on 24/7.
 
Would I need to switch on the light while drying? This is for Cape Town area. I prefer wet biltong

I would if I were you. The light does not dry out the biltong (that's what the fan is for). The light dries out the air to pull moisture to the surface of the meat so that the fan can blow it dry.

But if it pulls moisture out of the biltong will the biltong then not be very dry?

I took mine out after 2.5 days, cut a piece, was still pink inside. Left outside in a basket for a day, 100% to my liking. Made chili bites this week with tenderised steak strips, took one day. Second batch in.
 
Humudity is more a concern in regards to mold growth. If there is moisture in the air you risk the growth of mold and that can easily lead to food poisining.
