The Ultra model just has a higher boost clock, the PCB and Cooler are identical.

So you're good to go there as the temp at 21C ambient is 65C for the ultra model so the non ultra will run slightly cooler.

It's fine, the liquid cooler is a bit overkill, a hyper 212 will also do.
