Lol, that is a risky move by Fanatical which now belongs to Fandom. Leisure Suit Larry and Police Quest are 'cancelled' in the modern political sense.

Fanatical is a good digital store. They compete more directly with Humble. Humble is owned by IGN, and Fanatical is owned by Fandom. Fanatical used to be known as Bundle Stars, way back, changed name in 2017.

Fanatical are legit - and run a close 2nd to Humble Bundle. Used to be known as Bundle Stars, and I've bought dozens of bundles from them over the years. Never had an issue. Good idea to use a disposable email, but personally I quite welcome the (not over the top) emails.

Was linking Steam account a requirement to get this giveaway?

Had a look my side, and I've not linked accounts, but was able to get this - perhaps because I've been with them since 2017. Apparently it's so they can email you when they've a sale on your Steam wishlisted titles. Emails are highly configurable, but did notice I only have 2 of the many options ticked, so you should probably edit that to avoid too much spam.
