Ok, so i am back on mac after a few years,
got myself fusion..
and now want to setup a network between my vm's and occassionally bridge that to my main adapter.

On normal VMware, it creates VM adapters you can simply edit, add dhcp scopes, assign ips etc.
On my mac, there are no vm adapters, but if i do an ifconfig i can see them.

Question, how would i go about configuring these adapters, binding these to the VM, and adding new ones?

I'm somewhat confused by your question. You have two vmnet interfaces - mine are vmnet1 (bridge) and vmnet8 (NAT). In the settings for each VM you can choose which type. Both give you DHCP, but nothing stops you from configuring these IPs manually on each VM to separate subnets. You can add more than one interface to each VM too with different types of networking.

If you're talking about changing the addresses and other networking bits on the vmnet interfaces, have a look in:

/Library/Application Support/VMware Fusion/vmnetX

Once you've made your changes, restart VMWare networking with:

Code:
sudo /Library/Application\ Support/VMware\ Fusion/boot.sh --restart
