I used to get tuna and dorado steaks from a fish shop in Springfield park and the pricing and quality were amazing.
So this was what I ate last night, my wife came up with it and it was stupidly delicious.

6x chicken breasts butterflied, then wrapped in clingfilm and beaten a bit with a rolling pin
Stuffed with about a tablespoon of really good quality cream cheese and a good chunk of Camembert
Then rolled up and bound with streaky bacon, some butter on top and baked.
It has the most amazing smoky flavours and I used all of the fat in the roasting dish as a sauce for the veggies that went with it. The plus side is I also have lunch left over from it \0/
