I blame the iced coffee thing, they [caramel] goes well in it :o

I had nothing fancy: Apples, Ciabatta, Goats cheese and caocao nibs.
 
a small avo, topped with brown mushrooms and ham which had been sauteed in butter then simmered for a minute in cream

washed down with a full fat coffee

chicken breast with sides of hummus, spanish brinjal salad and sauteed mushrooms, onion and bell peppers with garlic.

Was going to have just an apple, but went meh, lets cook something..

Go to Google and type in vegetarian keto diet. Click on the reddit link. There are plenty of people like us doing the keto diet :D
 
I just broke down and ate 100grams of peanuts - in my defence I was freaking starving for some reason and peanuts are a great appetite suppressant

I should have asked this question a VERY VERY long time ago....but I only thought about it now since I was wanting it :)

Is Low GI bread suitable for weight loss? (If the question sounds dumb, please don't shoot me down :) )

That will depend on the individual. It's certainly better than "normal" bread, but check the actual GI and carb content if you're low-carbing. Personally, I cannot eat it.
 
Got a Nice Creamed Spinach Recipe that I have been using since attempting keto.
Fresh Baby Spinach, Cream, Cream cheese, Parmesan, Nutmeg, Butter.

Make a standard cream reduction with the cream cheese and cream. Then add the parmesan to allow it to melt, then add the nutmeg for a bit of spice. Then lower heat to around 3/10 and drop in the spinach. Stir until fully coated and leave on the hob for a few minutes. Time to wait will depend on how soft you like the spinach, so 1-10 minutes. I do it around 4 minutes at low heat with a few stirs.

The nutmeg was a surprise to me, but it adds a really nice spicey flavour to the mix. I had this with a peri peri wors and it was a killer combo, the cream helped to soothe the wors, while the nutmeg ensured that it didn't kill the spiceyness completely.

That's basically the recipe I use, except I use a combination of sour cream and cream, just had some now with roast chicken.
