Got a Nice Creamed Spinach Recipe that I have been using since attempting keto.
Fresh Baby Spinach, Cream, Cream cheese, Parmesan, Nutmeg, Butter.
Make a standard cream reduction with the cream cheese and cream. Then add the parmesan to allow it to melt, then add the nutmeg for a bit of spice. Then lower heat to around 3/10 and drop in the spinach. Stir until fully coated and leave on the hob for a few minutes. Time to wait will depend on how soft you like the spinach, so 1-10 minutes. I do it around 4 minutes at low heat with a few stirs.
The nutmeg was a surprise to me, but it adds a really nice spicey flavour to the mix. I had this with a peri peri wors and it was a killer combo, the cream helped to soothe the wors, while the nutmeg ensured that it didn't kill the spiceyness completely.
