RARE now you're talking my language - I'm always joking with my husband ... he wants that perfect golf swing and I want a steak braaied RARE enough.
But I've been away from home a lot lately and am only here every second weekend...

Talking about music have any one bought the new Michael Buble cd yet, is it any good?

this week's menu:
monday: meatballs (half pork banger filling, half lean beef, egg, onion, breadcrumbs), spaghetti, diced tomato tin, fried onions and some fresh basil
tuesday: frozen salmon with steamed baby potatoes, asparagus and courgettes. drizzle some lemon juice, olive oil and season if desired.
wednesday: xtra lean beef mince, tin of cream sweetcorn, tin of tomato soup, onions. cook mince, boil pasta, combine and bake in oven with some cheddar on top. freezes really well. serve with salad.
thursday: barley, white wine and hard cheese 'risotto' with chicken/bacon, mushrooms, butternut and spinach pieces
friday: crumbed frozen fish with baby potatoes and veg: oven roasted with herbs and olive oil (cut veggies yourself or buy woolies mix, can make a big batch and eat if throughout the week.)
some of my regular favourites:
1. bangers with sweet potato mash and a relish consisting of caramelized onion rings/pickling onions, carrots julienne, tinned chopped tomato, half a tin of kidney/baked beans and red wine - cooked slow till everything is soft.
2. bean curry with can of chickpeas, borlotti beans, kidney beans, lentils, cubed potatoes, diced onion chopped tomato. throw in some leftover chicken cut small if there's some in the fridge, or just keep it veggie.
3. chicken breasts chopped small, fried with onions & garlic, add a cup of cream, rehydrated sundried tomatoes, a bit of lemon zest and mix together with some pre-cooked store-bought gnocci. let it simmer for a bit. then serve, sprinke with roasted pine nuts and torn basil.
4. put chicken breasts in oven dish, cover with ina paarman herb pasta sauce. mix some cumin / spices in, drizzle with honey and cover with flaked almonds. cook at 180 till done and serve with couscous and salad.
My favorite : boil some kind of pasta (fettuccine is my fav)
Once the pasta is cooked fry some chopped ham (I like to do it with 150g pepper ham) in real butter, add about 250ml cream and about 150ml milk. Cook the lot untill the milk and cream have reduced to a thick sauce.
Toss the fettuccine into the pan with the sauce and coat the lot with the ham/sauce. Fry it all for another minute or so. Serve strait away.
All in all it takes about 10 min. Excluding the boiling time tho.
Otherwise when I'm lazy(er) I just brown 400g of mince, bang in a can of Chakalaka (not the hot one, otherwise I am in trouble, tho I love it) serve it with rice. Beware tho. My wife tells me that even the medium one is quite hot.
