Give it a go. Pop your dough into a oiled plastic container that can accommodate it doubling or a ziplock bag with a couple of sprays of nonstick. Put it in the fridge straight after you make it and it can stay in the fridge for up to 4 days. When you take it out and shape or pan it give it about 2 hours to rise.I haven't heard of that but it sounds interesting, thanks.
