Thanks for the suggestion C. (and congrats with your Apple TV) No ingredients for a glaze in the house so decided to do what I was going to do with the belly.

Simply put it in the pressure cooker for a bit and then cut it into steak slices. Pan fried them to give them some colour and texture. Served with a pea puree.

Was yummy.

How so you make that puree?

It looks almost better than the meat for being so colourful.

I have to say that this is currently our favourite "side dish".

Really easy. I take frozen peas and boil them in salted water for about 5min. Drain the water and back into the pot. Add a chunk of butter and a splash of milk and a bit of cayenne pepper.

Then let your stick blender go at it. Here you can go as far as you like. Wife likes ours super smooth so it takes a while and maybe another splash of milk or 2 if it is too thick. Personally I would leave some small little chunks in it for a more chunky mash texture if I was just making it for myself.

Salt and pepper to taste. And I add the equivalent of 1 or 2 teaspoons of sugar (I use my own homemade liquid sweetener) to the mixture as well. Peas can tend to be a bit bitter so the minimal sugar just breaks through that for us.

Interesting that they become bitter through the process.
 
As always Monday night pizza night,really need to try something new with toppings. Ham,Salami,mushroom,feta,corn,olives.
