I have a stew on the brew.....perfect CT stormy weather for it☺

Fettuccini Alfredo

This photo doesn’t do it much justice though, was delicious.

With the bacon/pancetta in there it looks more like a Carbonara than an Alfredo. What else is in it?

It doesn't look at all like a carbonara. A carbonara is egg based with a glossy texture that sticks to the surface of the pasta. I guess bacon is ok with an alfredo, but yeah it tends to use chicken or shellfish. But UrBaN963, next time you should use parmesan instead of grated cheddar.

I know what a carbonara looks like - we have it at least once a week. :) Bacon isn't a traditional Alfredo ingredient though, hence my qn.

FWIW Alfredo hails from Rome and originally consisted of only fettuccini, parmesan, and butter.

Bacon, mushrooms, 2 egg yolks, fresh cream, Parmesan. It’s not cheddar, it just got grated by an ingrate who used the large holes instead of the small holes.

Maybe I got the name wrong.

It’s pasta with bacon and mushrooms and a cheesy creamy sauce. Happy?
