For lamb shanks I coat it in smoked paprika and olive oil and leave for a while(maybe 1 hour) or overnight in the fridge. Then brown them in some oil over high heat. This is where most of your flavour and colour will come from. So after that you add some onions, garlic, carrots, potatoes, rosemary, half a bottle of red wine and keep it on high until the alcohol is out of the wine, add some stock and let it simmer for a while, after that I cover the pot with foil and put it in the oven on 160 for at least 3 hours, or untill it falls off the bone. This havent failed me yet.

yeah, some moong/yellow masoor dal/toor dal khichdi and tomato chutney. Tomatoes managed to retain shape though. Probably core discarded/pureed and outer layer sauteed separately & quickly to retain shape. is that home cooked @saor ?
