How does the vintage/aging/bottling work for the Three Ships 10 YO?

Vintage 2007 : Distilled and put in the casks in 2007
Aged 10 years : So in the casks until 2017

If now sold in 2020, when was it bottled? In 2017 or in 2020?

It's possible to decant the barrels into stainless steel tanks after the required maturation and store it there before bottling. The age doesn't change while in the tanks.

Of course that's just my guess Andy will be able to give you the details on what actually happens. Eg stored in tanks or do we actually have something closer to 13 years old.

The 10 year age claim means it is the minimum age of the whisky content, so there may be older than 10 year in the final bottling. It probably depends on the vintage

Im in southern suburbs, hopefully will have more luck. If not will just ask for a rain check and get when they have.

They seem to have quite a bit of stock at Checkers Blue Route. That could also be down to them having no advertising up in the shop about the special haha

I was under the impression if they have a vintage date it can only be of that year. So in this case it must all be at least 10 years old, but all of it from 2007.

The storing in tanks after aging makes sense.

I guess it is even possible that some of it was put in tanks in 2017, and some in 2018. That way it is still the same vintage, and at least 10 YO.

Well it could all be from 2007, just left in the casks longer than 10 years before bottling and as you say some might be stored in tanks and some aged longer. Not too sure

Casks are too valuable and too expensive to be used just for storage. When the whisky is ready, it gets taken out into tanks, stored and then bottled.
