Is there anyway to test throughput between a phone and AP at all?
 
WiFi settings should tell you under signal strength?
Otherwise test the round trip with ping, tracert and a speedtest

Does your AP have an FTP or Samba server?

Then there are various options and apps available to test or you can just work it out yourself based on time to complete transfer.

A Speedtest breaks out and tests the Internet speed of my line, though?

So right now my fibre is 50Mbps and my WiFi get's the 50Mbps. But I'm wondering if I beef my line to 100Mbps, will the WiFI reach that speed ?

Well then don’t do it on the AP but just to another device on your LAN.

Soul Assassin’s app seems perfect for the job.
 
Wifi analyzer on the play store will tell you the link rate at said distance.
 
If you have a Unifi AP they have a built in speed test in their mobile app :)

Otherwise if you have a some wired device you can use as a http server you could install https://github.com/adolfintel/speedtest and hit that from your wifi device, you could also use something like iperf but the speedtest html thing is prettier.

Gibabit Ethernet connected PC to your AP and test transfer speed to the PC from the phone.

If that's accurate, I'm getting 200Mbps around the house ... not bad.

I'll try copying files on my LAN
It's pretty accurate for me, what that tells me and what transferring a file from my Plex server to my phone shows is more or less the same, around 44MB/s or 350Mbps.

What are you using?

I'm going to shut down my mesh and try the standard router.
