Wondering if I should downgrade to 5.0.1 from 5.1 beta 3, just so I can Jailbreak, or should I rather just wait for 5.1 to be released and jailbroken?

Yeah. The public release is 5.0.1.
You need to install appsync on the iPad. For iOS 5.0+ available through Cydia.
How long does the "Beginning jailbreak, this may take a while..." part take. Mine has been going for 25 min now and the indicator seems like it hasnt moved.![]()

Correct.
Connect your iPad to iTunes, ensure it makes a backup. Then settings>general>reset>erase all content and settings... When the device reboots run through the start up settings, don't do a restore through iTunes but run the jailbreak tool. Should be done in about 2 minutes...
When I click on Cydia I get " Could not activate cellular data network"
