So I never asked for this stupid software to be installed, but Apple think they are important enough to just go ahead and install it on my PC anyway. What the hell is it for? And even more important, when I go to uninstall it, why the flipping hell does it need my weather gadget to be closed before it will uninstall? Is Apple mad?

iTunes installs it among other things. Apple software on PC = bloatware
 
This is the main reason i have moved away from Apple software. I used to used Quicktime and iTunes but then saw all the extra services it installed along with it. Basically it ends up slowing your PC down because there are unnecessary Apple services/Processes and software running at all times. Steer clear from Apple software
 
A friend of mine was going nuts when background net activity wiped out his 3G data plan on his laptop - culprit was Bonjour - uninstalled itunes - end of problem
 
Interesting - when I recently upgraded to Windows 7 I was asked after the installation pre-check to uninstall itunes.
