Best knife sharpener

Can these put a new edge on a blade with a totally stuffed edge or are they only really for sharpening a good edge?

I have 2 Wusthof knives that were trashed by someone else and they need the edge to be reground/reset.
No idea. I used them on some knives which mostly needed touch ups.

99% of my knives are Japanese - any thoughts on how well they would play with a Warthog?

I have the Global minosharp for them at present, but for me its performance is simply okay rather than excellent.

It looks a bit lightweight for the full re-edge of a knife but I could be way off.
Anyone know?

I have a few Global knives. I've only ever used a steel on them, but... I have a one that my SIL destroyed on Xmas day. I've ordered one of these to try get the big dings out before going back to the steel. Let you know how it goes.
The blade is seriously trashed, this is a last resort.

Surely a whetstone is best for Japanese knives? Are they cheapies from the local Chinese grocery or serious high carbon stuff?

I'll use a Lansky on them. Once fixed - onto the Warthog.

I think it depends just how stuffed that edge is.
It can put a new edge on. There's a separate method for first time sharpening of a knife vs maintenance of that knife. The primary difference is the first time sharpening is grinding that blade edge to the angle at which the Warthog is set
 
To all those who recommended the Warthog, cheers to you all. :)

Super impressed with it. Tried in on one of my fairly old chef's knives and it's back to super sharp with minimum fuss. Highly recommended.
 
OK, not the high carbon stuff then. Any of the faves mentioned in this thread will probably be more than adequate I think. Interesting to read about the SAI range though, they sound neat.

Yup - we really enjoy using them. Most of ours are between 4 and 15 years old - we have 8 or 9 variations depending on application.

Would just like something that keeps them a touch sharper than the Global MinoSharp.
