Homemade Pizza

Pizza tonight. But first, we make sauce.

EDIT: Second actually - made the dough last night.
 
All’s well that ends well. Managed to get the Weber with kettle caddy up to over 490c which is fairly respectable IMO.

Now I have a bucket of sauce to get ready for the freezer.
 
So I bought the Pizza Braai. Heats up quickly and pizza is done in 2 minutes. Have to play with the temps a bit. Lot of heat from the top and too little from the bottom. Used type00 flour 70% hydration. Tamato base, mozzarella, feta, herbs, olive oil.

such a cool gadget.
 
Yes, I scraped some coals underneath the unit which did the trick. It was a tad too hot though. I burnt the first pizza a bit.
After I scraped some coals away, it cooled somewhat.
You really don't need a lot of wood to make pizza in this unit.
 
Pizza get a little soggy? It happens :)

My downfall is usually too much cheese.

Hehe yeah. I always seem to put on double the amount that is necessary.

The wife on the other hand puts on 1/2 the amount necessary.

Together we get it just perfect.

That's pretty normal in a brick oven as well. We usually do a focaccia starter first otherwise there's a fight over who gets the burnt pizza. First time I've seen this looks really handy.

This thread reminds me it's time to make sauce... and pizza. The kids have been Stromboli obsessed so it's time to mix it up a bit.
