Having seen some spectacular wedding photos from a local wedding photographer who shoots her weddings with an advanced point and shoot I can tell you that argument doesn't fly with me.
Some wedding photographers seem to think of themselves as prima-donnas of the photography world. It's photography, not rocket science.
Mostly ego and luck.

im sure any photographer can take a pic with a good camera and make it work
Then that's why you're better off booking the cheapest photographer you can afford.

Well, there's my point. Having someone who actually has skill take your pictures makes a huge difference.
