iTunes 11.1 direct from the US site was quick (SA site has older version?). IO7 downloading in iTunes, maxing out my 1MB line. Using MWEB uncapped.

Opened up iTunes and it immediately asked if I wanted to download the latest version. It's going well, so far. Will wait until an OTA update comes for the missus' iPhone and iPad.

I was having the same issue when trying to activate directly on the phone, connected to iTunes and quickly got past the "activation servers cannot be reached" issue.

Success. Eventually got activated on the phone. You just have to be patient.
